May 09, 2008 (The Gazette - McClatchy-Tribune Information Services via COMTEX) -- Rachel Brown, executive chef at The Briarhurst Manor Inn, had a hard sell on her hands at the Taste of the Springs on April 27. Taste of the Springs is an event to benefit the Colorado Springs Care and Share Food Bank. She was dishing up Blue Corn Dusted Frog Legs with Red Pepper Remoulade. People would pick up the plate, and when she told them enthusiastically what they were going to eat, they'd politely put the plate back on the table. Really, frog legs are delicious with mild sweet flavor -- similar to chicken. This was one of the offerings on the restaurant's new small plate menu and she wanted to show it off. According to the eatery's newsletter, "The introduction of the dish has been an overwhelming success. We have provided 400 portions of this dish at fundraising events and ran out of food in less than two hours." Call 685-1684 to make reservations. Refreshed Lawrence Johnson, owner and chef at The Warehouse, 25 W. Cimarron St., has been doing some spring cleaning. "The restaurant was a bit worn and tired when I purchased it last July," he e-mailed, "and we are finally getting some work done that we wanted to have finished for this summer season." He's put up some partial divider walls in the dining room to create a more intimate feeling. He recarpeted the main dining area and added fresh paint. He also gave the menus a workover. Look for half price bottles of wine from the entire list on Saturday evenings. Other days, Johnson selects a white and red wine that he offers for half price. All this just in time for the reopening of the Cimarron bridge. Drop in and check things out. Hours are 11:30 a.m. to 9 p.m. Mondays through Fridays and 5 to 10 p.m. on Saturdays. Call 475-8880 for reservations. Cookbook of hope Chefs and culinarians of Southern Colorado put their heads together to create a cookbook: "Recipes for Hope 2008." There are more than 100 pages of recipes from the likes of Franco Pisani of Paravicini's Italian Bistro, Peter Aiello of The Alpine Chef catering, and Jeff Knight of The Craftwood Inn. Cost of the book is $15 with 75 percent of the proceeds going to the Colorado Springs Care and Share Food Bank. Place orders by calling 528-1247, ext. 222 or buy them at 2520 Aviation Way, No. 130. Burger times If you loved Classics Hamburgers and cried when they went out of business, you'd be happy to know Rich Beaven, the original founder of Classics, has opened another burger joint -- Drifter's Hamburgers at 4459 Mark Dabling Blvd. He will be once again cooking his California-style hamburgers using Ranch Foods Direct ground beef topped with his secret Thousand Island dressing. Hours are 7 a.m. to 8 p.m. Mondays through Saturdays. Now open Joseph's -- Fine Dining in a Casual Atmosphere, 1606 S. 8th St. -- is officially open. Hours are 11 a.m. to 2 p.m. Sundays through Fridays; 5 to 9 p.m. Mondays through Thursdays; 5 to 9:30 p.m. Friday and Saturdays; and 5 to 8 p.m. Sundays. Call 630-3631 for reservations.
